Breaking the Fast with Goodness


All of a sudden I was hearing cowbells. No moooo. None at all.

It had to be one of the chimes on the other side of the backyard. I looked over to see what may be swaying in the wind.

Ha!

The Husband stood outside the patio door, clanging on the triangle. "Come and get it," he called. "Coffee and pancakes."


Whooo-hooo!


We've had some tasty breakfasts the last several mornings because, one, we finally went to the grocery store and, two, we were without peanut butter, our breakfast staple. The other day I made strawberry brie biscuits, which looked more like scones. Biscuits or scones, they were delicious. You can't go wrong with brie or strawberries.  We happened to have frozen organic strawberries from last summer. Very flavorful, they were.

My concoction began with a mixture of 2 cups of flour and about 1 teaspoon of baking powder and a couple of dashes of baking soda. (I added the latter because I ran out of the former.) To that, I cut in 1 tablespoon or so of salted butter, then mixed in about 1.5 ounces, more or less, of diced brie and about 1 cup of diced strawberry with sufficient ice water for everything to come together to form a dough. That, I scooped into 8 or 9 mounds which I plopped onto a parchment-paper-covered frying pan and baked at 400 degrees for about 20 minutes. The mounds melted into each other so we cut them into wedges. What a treat!

Brie pancakes, with or without the strawberries. What do you think?

    I LOVE brie, but I don't know with strawberrie,s, which I always eat with whipped cream in a dessert, or strawberries in a salad. but neat that your hubby cooks you breakfast:):) Many thanks for sharing this enjoyment with All Seasons! Have a tasty week:)

    1. I wasn't sure about the strawberries, but I'm certainly glad I tried it. Apricots and brie would be good, too. The Husband makes pancakes about every 2 weeks. Lucky me.

  9. Yummm. I love that you ran out of peanut butter but not Brie! I think you have your priorities straight....always make sure to have good cheese on hand! Your drawings are so great!

  10. I think JSJ is a lot more delightful than me but I thank you. So where arrreee the photos of this scrumptious breakfast? Not even a mound for a mouse? I smell the strawberries right now and yes, here comes the brie.
    I love that coffee cup and picture you have a slew of them around your house and garden. I like how the sunrise has old man hair and is peeking into your breakfast scene.
    And need I say it, "More cow bells!"

    1. I should've taken a photo of our crumbled napkins and happy faces afterwards. :-) I love your description of "old man hair" for the sunrise. :-) This morning I was telling the Husband that maybe I got rid of too many coffee cups. A good excuse to build up the coffee cup collection again.
